Green Chile Pork Chops

 

 An easy way to bring the unique flavor of Hatch green chile to your food.


HATCH GREEN CHILI PEPPER PORK CHOPS

Ingredients
  • 2 Tbsp of olive oil
  • 2 lb pork chops (about 4 oz ea.)
  • Hatch Green Chili Pepper Salt (about 2 tsp) You can adjust to your preferred taste!
  • 1/4 cup chicken stock
  • 1 lg white onion (sliced about 1/4" thick)

Directions

Place pork chops in a large mixing bowl or a shallow dish and pour in the olive oil to begin seasoning. Make sure both sides are evenly coated. Sprinkle Hatch Green Chili Salt on both sides of pork chops. Heat pan to medium high heat with a bit of olive oil. Arrange the pork chops in the pan with the hot oil. This may need to be done in batches, depending on the size of your pan. Cook for about 2-3 minutes per side till nicely grilled. Remove pork chops and set aside to rest. In a saute pan, add in your onion and cook for about 3 min till they are slightly translucent. Add in your chicken stock and bring to rapid boil. Taste mixture and add more seasoning if needed at this point. Simmer by lowering heat and reduce mixture by 1/3. Add pork chops and cook till reduced by 1/2 of remaining mixture.

Arrange on plate (2 per person) and spoon onions and reduced liquid on top of the pork chops and enjoy.

Serve with your favorite salad and sides.

Chicken breast can easily be substituted for pork chops.
