Chicken Fajitas

  • 2 Tbsp of olive oil
  • 1 lb chicken thighs
  • Jalapeno Salt (about 2 tsp) You can adjust to your preferred taste!
  • 1 large white onion
  • 1 bell pepper (your choice of color)
  • black pepper to taste
  • flour tortillas

Take 2 Tbsp of olive oil, and add to 1 lb of chicken thighs. Season both sides with Jalapeno Salt. Add black pepper to taste. Grill thighs on hot grill getting some nice grill marks for added flavor.(Approx. 2 minutes per side till juices run clear) Place cooked thighs in covered bowl or simply wrap in foil and let rest for about 5 minutes to help maintain their juiciness. While the chicken is resting cut the onion and bell pepper into strips and season with Jalapeno Salt. Heat the tortillas on both sides until there are light brown marks. Cut the chicken into strips. Assemble the chicken, onion and bell pepper into a tortilla.
