CHICKEN FAJITAS

- 2 Tbl of olive oil
- 1 lb chicken thighs
- Jalapeno Salt (about 2 tsp) You can adjust to your preferred taste!
- 1 large white onion
- 1 bell pepper (your choice of color)
- black pepper to taste
- flour tortillas
Directions
Take 2 T of olive oil, and add to 1 lb of chicken thighs. Season both sides with Jalapeno Salt. Add Black Pepper to taste. Grill thighs on hot grill getting some nice grill marks for added flavor.(Approx. 2 minutes per side till juices run clear) Place cooked thighs in covered bowl or simply wrap in foil and let rest for about 5 minutes to help maintain their juiciness.
Cut thighs into 1/2“ strips and serve with warm tortillas and your favorite toppings.
We like grilled/sautéed onions, and bell peppers, and don’t forget to season the vegetables with Jalapeno Salt as well. Serves 4.
