Mexican Pork and Bean Burrito

Another hot twist on an old classic!

  • 4 very thin boneless pork chops
  • 1 Tbls olive oil
  • 1/3 cup white onion, chopped
  • 1 fresh jalapeno pepper, sliced thin4 oz refried beans
  • 1/4 tsp Jalapeno Salt
  • 1/8 tsp ghost pepper powder
  • 4 tortillas
  • salsa

Wear gloves when handling hot peppers and wash hands thoroughly.

Heat pan to medium-low and add olive oil. Season the thin pork chops with Jalapeno Salt and add to the pan. Also add the chopped onion and sliced jalapeno. Meanwhile, add the ghost pepper powder to the refried beans and mix thoroughly. Heat the refried beans. When the pork is brown on one side, about 2 minutes, turn the pork chops over.

Heat a pan to medium to heat the tortillas. When the pork and refried beans are ready, put the tortillas one at a time in the pan. Turn when they start to get spots of color and bubble.

Assemble the burritos by smearing refried beans on the tortillas. Add the pork and top with your choice of salsa. Roll up and enjoy!
